  • 〔Major achievements〕The Learning Process for a Food Waste Learning Program Incorporating Problem-Solving in Cooking Practices to Foster Consumer Citizenship
    Emiko Ishijima Reiko Matsubaguchi, Lead, This study used a mixed method analysis to clarify the process of reducing learners' food waste in accordance with the home reduction behavior. This is based on the qualitative data of learners' impressions, which were collected during the evaluation of the food waste learning program. Results show that this program could strengthen the intrinsic motivation to acquire cooking skills by deepening one’s social awareness of food waste and cooking skills, and the internalization of consumer citizen values. It became clear that learners can develop an independent action attitude. The problem-solving cooking practice suggests a learning process by which a physical understanding of social issues is created and feasibility evaluation, self-affirmation, and elation for food waste reduction actions are expressed., 日本消費者教育学会

  • Ibaraki Prefecture Home Cooking:— Kenchin Soup with either Soba or Udon Noodles —
    吉田恵子、飯村裕子、野口元子、石島恵美子、荒田玲子、渡辺敦子, In Ibaraki Prefecture, home-cooked kenchin soup is eaten with either soba or udon noodles; however, the details remain unclear. Therefore, to compare the preparation of kenchin soup in the past (1950–1960) with the present (2016), we conducted a questionnaire survey. The results showed that in the past, 32 % of people ate kenchin with udon, however, nowadays kenchin is preferred with soba. We found that the ingredients and dashi (broth) have changed over time and the current method of preparation is simpler and uses more variety of seasoning. Finally, the number of people who consume kenchin, with either soba or udon, on celebrations has declined. These results suggest that the preparation of kenchin soup has changed over time to suit current eating habits and lifestyle., 日本調理科学会

  • 〔Major achievements〕Behavioral Determinants for Reducing Wastage of Food at Home among High School Students:With a Focus on the Attitude of Students in the Kanto Region
    Emiko ISHIJIMA, This study aimed to build a behavioral decision-making model to reduce wastage of food at home by conducting a questionnaire survey among high school students in Kanto Region. This study was based on a factor,linkage model of environmentally conscious behavior and regulatory factors that promote behaviors to reduce wastage of food at home. Covariance based structural equation modeling indicated that decision-making for,household food waste reduction consisted of two stages. The first stage included the determinants of creating a goal of reducing wastage of food at home among high school students as risk perception and coping effectiveness,whereas the second stage included the determinants of action intention as assessments of costs/benefits, social norms, and feasibility.

  • 〔Major achievements〕Review of literature on problem-solving cooking practice with a consumer-citizen perspective
    ISHIJIMA Emiko,

      The purpose of this study was to summarize research trends regarding problem-solving cooking practice that nurtures consumer-citizens in order to obtain basic data for teachers to design lessons to foster the dietary habits of consumer-citizens.

      The research methods consisted of a selection of keywords related to "consumer-citizens" in an analytical framework that utilized the "classification of concepts of consumer education" and an exploratory review of literature on problem-solving cooking practice that addressed this issue.

      The results confirmed the effectiveness of consumer education with a curriculum that utilized problem-solving cooking practice in order to improve skills such as "decision making", "resource management", and "citizen participation". However, because this is a relatively new study, issues regarding the measurement of educational effects require further research.

  • Ibaraki prefecture home cooking: side dishes
    Iimura Yuko; Arata Reiko; Ishijima Emiko; Watanabe Atsuko; Awazuhara Motoko, 【目的】日本調理科学会特別研究会「次世代に伝え継ぐ日本の家庭料理」の茨城県の調査地域である5地域において昭和30〜40年代に副菜として食されていた中で特徴的なもの8品を報告する。

    【方法】県内5地域（県北，県央，県西，県南，鹿行）において平成24年〜26年度に聞き書き調査を実施した。その調査から分かった地域ごとの副菜の特徴について検討した。

    【結果および考察】県北の北茨城市には平潟と大津の2つの漁港があり，平潟ではアンコウ（鮟鱇）を底曳網漁で，大津ではイワシ漁が盛んであった。現在ではともに漁獲量は減少してしまったが，平潟では初午に「鮟鱇の共酢和え」を，大津ではイワシの水揚げの増える秋になると「卯の花漬け」が供されている。

    県央は畑作が農業の中心であり，夏は，茄子を味噌で炒めた「茄子のしんやき」が定番のおかずであった。料理名は，「鍋しぎ」から派生したとも考えられる。冬は，根菜類が豊富で，「煮和え」が人寄せの際に供されていた。せん切りの人参，牛蒡や白滝を炒め煮にし，仕上げに酢を入れるのが特徴である。

    県西の結城市には麩に塩をまぶしてゆでて干した「すだれ麩」があり，「すだれ麩のごま和え」が冠婚葬祭時など人の多く集まる時に食べられていた。

    県南の石岡市では，県西の行事食すみつかれの流れを汲むと思われる「酢むつかれ（煮なますとなますの2法がある）」，土浦市では，霞ケ浦での漁が盛んであり，そこで獲れたワカサギを使った「ワカサギの煮干し」が食べられていた。

    鹿行の鹿嶋市では，霞ヶ浦でとれる小魚の酢漬けを加えた「がりがりなます」が，現在でも食べられている。鬼おろしで卸した大根，人参が，みずみずしい独特の触感と味わいを創出している。, The Japan Society of Cookery Science

  • The Background of and Survey Investigation into Class Size Reduction for High School Home Economics in Tokyo Prefecture
    NONAKA Mitsue; KAMEI Yuko; SHINYAMA Mitsue; ARAI Kiyomi; ARAI Tomoko; ISHIJIMA Emiko; SANADA Chieko; TAKAHASHI Reiko; YOSHINO Atsuko, The objective of this report is to examine the background behind, and grasp the present situation of and issues for, reduced class sizes for home economics classes in Tokyo high schools. This was accomplished through analysis of Tokyo High School Home Economics Education Research Committee (THR) activity reports (1966~2013), and by interviewing teaching staff. In 2015, in order to gauge the present circumstances and issues concerning reduced class sizes home economics teachers were mailed questionnaires and 73 responses were attained. The following was discovered. Reduced class sizes for home economics classes in Tokyo high schools has been progressively implemented and developed due to continued petitions and requests from the THR based on generational issues in home economics classes and through proven success of the initiative. Furthermore, a 2015 survey on reduced class sizes showed that its implementation prevents home economics credits being lowered and helps limit reduction of full-time teachers of home economics. 87.7% of home economics teachers that experienced class size reduction reported that it was 'good' because it encourages active learning. However, there is significant variation in the understanding of class size reduction amongst teachers.   • 茨城町の郷土料理"つと豆腐"に対する消費者意識
    石島 恵美子; 安島 清武; 田口 眞一; 櫻井 輔; 田村 誠; 阿部 信一郎, Lead, "つと豆腐"は茨城県東茨城郡茨城町の郷土料理であり，近年，その喫食機会は著しく減少している。"つと豆腐"の潜在的購買層を把握するため，2016年9月に茨城町内のショッピングモール来店者を対象に試食アンケート調査を行った。"つと豆腐"に対する購入意向は，"つと豆腐"の伝承意識が高く，食に対する健康志向が高い回答者，および"つと豆腐"が「食べやすい」および「子供が喜ぶ」と評価した回答者で最も高かった。購入意向を示した回答者の多くは，"つと豆腐"を日々の食事の食材およびおつまみとして購入することを期待し，購入場所としてスーパーマーケットを希望した。価格受容分析の結果，豆腐一丁（約300 g）から作られた"つと豆腐"の最適価格および無差別価格（妥当価格）はそれぞれ177円および195円と推定された。"つと豆腐"は日常食として現代の消費者に受け入れられる可能性が高いと考えられる。, 一般社団法人 日本調理科学会

  • Learning Environment of Co-educational Home Economics in Senior High Schools for 20 Years:Through Curriculum Investigation in 4 Prefectures in Kanto District
    NONAKA Mitsue; KAMEI Yuko; SHINYAMA Mitsue; ARAI Kiyomi; ARAI Tomoko; ISHIJIMA Emiko; SANADA Chieko; TAKAHASHI Reiko; YOSHINO Atsuko, This research aimed to investigate the influence of the new course of study in senior high schools, and to inspect about 20 years after switching to a co-educational home economics course (1994). The curriculum of 404 public senior high schools in 4 prefectures were investigated. In addition, the transition in the placement of home economics teachers over the 20 years period was analyzed. The following results were obtained. 1) With the implementation of the new course of study (2013), the ratio of those taking the required subject of home economics (2 credits) increased. However, in about 80% of the school curriculums, special home economics subjects were added as electives to the required subject of home economics. 2) The number of schools employing non-regular teachers instead of full-time teachers for home economics increased with the implementation of the new course of study. 3) Teacher recruitment at the time of switching to a co-educational home economics course (1994) has also influenced present teacher placement and study activities., The Japan Association of Home Economics Education

  • High School Students' Attitude toward Social Participation and its Relationship with Home Economics Education
    ISHIJIMA Emiko, What is needed more for the future of the home economics education is to contribute to building of a mature society, and to nourish the knowledge and skill to live a rich family life in relation to the various links of the society This requires a participation in community events, becoming influential in the society as well as joining in the social event from the planning phase to express one's opinion. Thus, it is indispensable for home economics education to promote these activities by encouraging students' social participation. A questionnaire study was conducted, as a preliminary step, to examine high school students' attitude toward social participation and its relationship with educational and other attitudinal factors. This study also attempted to find how these attitudes were created and what factors influenced this process. Results are as follows: 1. Concerning high school students' interest in social participation, it was found to be insignificantly related to the social-attitudinal factors comprised of one's own experience. Significant differences were noted with respect to the effects of educational factors, especially in interest in social interaction. 2. Students' interest in social interaction contributes to the two subscales of interests in social participation. This suggests that increasing high school students' motivation to interact with others results in elevating their interest in social participation. Therefore, creating an educational environment in home economics education that would encourage students' interaction is necessary to increase their interest level in social commitment. 3. Students' interest in morality contributes to their sense of efficacy of social participation. Support for facilitating morality is directly linked to students' confidence in social participation., The Japan Association of Home Economics Education
